Show Us Your Dinner Recipes- Crock Pot Roast



I'm sooooo excited (and Jason is gonna be too!) because Kelly is hosting a "Dinner Recipe" blog carnival this week!  I am sharing my "go-to" recipe for Roast, Potatoes and Carrots.  It makes a great holiday meal or something hearty during the week.  And best of all.....it's all cooked in the crock pot!  So easy!  (you really CAN'T mess this up!!) 
(and almost no dishes to wash!!)

I actually need to give credit where credit is due....I saw Sandra Lee make this on her "Semi-homemade" show about 3 years ago and tried it the next day.  Since then I have "tweaked it" a little...but it's still sooo yummy!

Roast, Potatoes and Carrots
Ingredients:
3-4 lb rump or shoulder roast
1-2 onions
8 oz. baby carrots
½ lb potatoes, cut into chunks
8 oz. mushrooms
2 Tbsp oil
1 can condensed cream of celery soup
1 pkg onion soup mix
1 cup beef broth
¼ cup A-1 steak sauce
House seasoning to taste (Paula Deen)


1. Season roast on all sides with house seasoning. Heat oil in skillet and brown/sear just the outside of all sides of the roast.


2. Put onions, carrots, mushrooms and potatoes in crock pot.


3. In a bowl, mix celery soup, soup mix, broth and steak sauce (and maybe a little more house seasoning) Place the pot roast on top of the veggies in the crock pot and pour soup mixture over the top.


4. Cover and cook on high 3-4 hours or low 8-9 hours.

(I don't have a picture to share, but you can use your imagination!!)

This makes the most tender, yummy roast and all the veggies have a good flavor, too!  I just serve it with some sort of green vegetable and maybe some rolls and you're done!
