snowed in

Thursday morning it started to snow.  And it just kept snowing and snowing!  We have about 3-4 inches as of today, and it doesn't look like it's going anywhere until next week.  Jason is loving it, but Lauren and I are feeling some serious cabin fever!!

We tried bundling up and taking Lauren out in the snow, but she was not all about it.  I think it was too deep for her to run around!  And there was some ice where the temp has dropped and made things a little slippery.  We were outside for 5 minutes, tops, and then we headed back in to thaw out.

And, in case you didn't hear, Alabama won a little title last night called the National Championship!  Jason is beyond excited.  I am threatening to call the cable company and have ESPN removed from our package!  This was Jason discussing the details of the game with his dad....(no idea why he gave me the peace sign?)


Since we've been cooped up, Jason pulled out one of Lauren's new toys that she got for Christmas- her Little People Farm from Grandma Judy. 



Lauren was happy as could be.  You know the poor girl just doesn't have any toys to play with! :)

I also fixed this yummy supper thanks to Paula Deen's recipe tonight.  This is what was left when Jason, Lauren and I were finished devouring it!   We had green beans and maple-glazed carrots with it.  Not too shabby!



Here is the recipe....

Cheesy Chicken and Dressing Casserole

2Tbsp olive oil
4 boneless skinless chicken breasts, cut into 1/2 inch pieces
1 large onion, chopped
1 (8 oz) pkg baby bella mushrooms, quartered (I just used canned mushrooms-we had them already!)
3 cloves garlic, minced
1 (8 oz) pkg shredded mozzarella cheese
1 (10.75 oz) can cream of mushroom soup
1/4 cup whole milk
1 (6 oz) pkg chicken flavored stuffing mix
5 Tbsp butter, melted

Preheat the oven to 350 degrees.  Spray a 9x13" baking dish with nonstick spray.
In a large skillet, heat oil over medium heat and cook chicken until lightly browned and cooked through.  Removed chicken from skillet and place in bottom of 9x13 pan.

With the skillet still on medium heat, cook the onions, mushrooms and garlic until they are tender.  (I added a little southern seasoning in with my onions and garlic...yum!)
Spread onion mixture evenly over chicken in pan.

In a small bowl, mix together the milk and mushroom soup.  Pour evenly over chicken and veggies.  Top with the mozzarella cheese.

In a medium bowl, mix together the stuffing mix and melted butter.  Sprinkle evenly over cheese and bake for 25-30 minute sor until hot and bubbly.  Serve immediately.

This was easy-peasy to make and all the indgredients were pretty inexpensive.  Plus, Jason and Lauren both gave it a thumbs up...Lauren actually cleaned her plate and Jason went back for seconds. 

I will be making this again! :)
