Recipe Post #1

Ok, I'm definately not a foodie blogger or anything....
...but I do like to cook!  So I thought that I would share a favorite (and for the most part, healthy) recipe with my blog readers. :)

Turkey and Dressing Soup (from Paula Deans's magazine Jan/Feb 2008) 


**This soup is so good because it tastes like Thanksgiving!  
You can have a turkey meal without all the fuss!!**

What you need:

2.5 lb skin-on, bone-in turkey breast (I have not been able to locate one of these, so I just use boneless!)
10 cups water
2 carrots, chopped
3 cups chopped celery, divided
2 onions, chopped and divided
2  bay leaves
1 tsp salt
1 tsp pepper
1.5 tsp ground sage
1 tsp poultry seasoning
2 hard boiled eggs, sliced (optional)
your favorite corn bread, made from scratch or a mix

In a large pot, combine the turkey breast, water, carrots, 2 cups celery, 1 chopped onion, bay leaves, salt and pepper. Bring to a boil, reduce heat and simmer, covered for 1.5 hours.  Remove turkey and allow to cool slightly.  Remove and discard skin and bones.  Chop turkey meat.

Strain broth, discarding solids.  Return broth to dutch oven.  Add 1 cup chopped celery, the other chopped onion, 2 cups chopped turkey, sage and poultry seasoning.  Bring to a boil and then reduce heat and simmer, uncovered for 45 minutes. 

Serve with cornbread and boiled egg slices (optional!  We don't do the hard boiled egg!) 

This is super yummy and really easy to make...and it makes your house smell so good!  (like Thanksgiving!!)

This sounds great, although like you I would eliminate the egg. Thanks for sharing recipes, I think I am going to start doing this every once in a while on my blog.
